GF Belgium Waffles

Gluten-Free Belgium Waffles

One of the most amazing aspects of cooking & baking gluten-free for the past year or so, has been discovering that many of my recipes are actually BETTER gluten-free.  For instance, flavors of the food are more distinct & the texture/consistency is more interesting.  Therefore, even if you don't have to eat gluten-free (as I do not; but choose to) but truly enjoy your meals - you may want to try the following recipe for waffles.

When our children were growing up, I made breakfast every morning.  Since they are older (& essentially out of the house) I typically only make breakfast on Sunday for Tony.  Sure, there are readily available frozen GF waffles, but the freshly made GF waffles are so aromatic & crispy on the outside while remaining soft on the inside - the frozen waffle is no match.  They probably cost more too!  Although I'm still tweaking this recipe, it's worth trying & I would love to hear any adaptations you make.
Ingredients:

  • 1 1/3 cup GF Waffle "Flour" such as Bisquick (they make GF)
  • 1 1/4 cup Milk
  • (3) Tablespoons Canola Oil (or olive oil)
  • (1) egg
  • 1 1/2 teaspoons pure vanilla extract
Directions:
  • Heat waffle iron.  I prefer a Belgium iron - but regular works too.
  • While iron is heating, blend together all ingredients.  Do not over mix.
  • Once iron is hot - using a ladle spoon in your batter.
  • Honestly - nearly as quick as popping a frozen waffle into your toaster - but soooo much better.
