Italian-Styles Pulled Pork

ITALIAN-STYLE PULLED PORK

... A No Work Recipe from
"Well Fed" Paleo Recipes for People Who Love to Eat!

This recipe looked so fantastic in the book - as well as so simple - I had to try it; particularly on a busy Monday.

If you've not at least perused the Well Fed cookbooks, by Melissa Joulwan, you should as they are designed for those of us who love to cook (and eat) but also for those who may be a bit of a novice in their apron.  Additionally, it's kitchen art - her book contains fabulous pictures, excellent coloration, easy to read layout & full of wonderful ideas. Lastly, if you are not familiar with Paleo eating, it provides a synopsis along with the nuts & bolts of what to eat/what to avoid & how to convert your favorite condiments to Paleo.

Prep: 10 minutes (for real)
Slow Cooker = Low
Cook time: 14-16 hours (however I would check at 12)

INGREDIENTS:
5-7 pound pork roast; boneless or bone-in
2 cloves garlic sliced thin (she calls for 4)
(1) Tablespoon Kosher salt
(1) Tablespoon Italian Herb Blend (oregano, parsley, thyme, sage, rosemary, red hot pepper flakes) ... to be honest - I definitely didn't measure the dry rub above as I used what I needed to cover the pork
Fresh ground pepper

DIRECTIONS:
Rinse & pat dry pork roast
Cover with Italian Herb Blend
Sprinkle with Kosher Salt & Ground Pepper
Make a few slits & place the garlic slices in the slits
Place roast in the slow cooker & set on low for 14-16 hours...again, I would check sooner if using a lean cut of pork (I used loin of pork)

That's it! No liquids added - just set it & go.  The roast is finished when it can literally fall off the bone or break apart with a fork.
